Christmas cupcakes

On a Winter's night sometimes all you need is a nice chunky cupcake to get your teeth into. 
This recipe is my own recipe that i've tweaked throughout the years. I'm sure it once came from someone... however, i've been doing the same one for so long that the quantities and ingredients always change depending on how i'm feeling.

Christmas cupcake recipe

To make 6 cupcakes you will need...
20 grams cocoa powder
4 tsp hot water
2 medium eggs
85g butter
85g golden caster sugar
50 grams self raising flour
1 tsp baking powder
1 tsp cinnamon powder
I cheat and buy frosting for my cupcakes as it just saves me so much time and cleaning (Dr Oetker)
pre bought sprinkles (mine are from Waitrose)
Cupcake cases

Firstly... Preheat your oven to 180 degrees celsius.
 Pop all your ingredients into a bowl and mix. I usually add my butter and caster sugar followed by the eggs then flour and finally additional extras.
Get your Christmas cupcake cases and spoon evenly, after their all in case place a rolo chocolate piece on top. Put them in the oven to bake for 10 minutes (give or take) To test, poke a knife into the centre of your cupcakes if there's any residue.... they ain't ready sisterrrrr! Keep checking every 3 minutes or so. 

Once your cupcakes are baked, leave them out to completely cool. (I know the urge to get the frosting on them is intense but you have to push through and be patient). 

Once cool, Go crazy and decorate however you choose. I used chocolate frosting and christmas sprinkles.
